In his earlier years, Hubert loved to hunt. He was also an avid gardener with a super green thumb . He created by grafting, what he called a Fruit Salad Tree . This tree had five different fruit on it, which got the attention of the local newspaper. His latest interest was horse racing. He loved getting together with his son Michael to talk and compare each horse running and which was to win the race of the day.
